[ world famous recipes ] Chocolate Chip Angel Food Cake

Chocolate Chip Angel Food Cake   1 1/4 cups
cake flour(not self-rising)   1 1/2 cups superfine sugar  
14 large egg whites, room temperature   1 1/4 teaspoons cream
of tartar   1/2 cup coarsely grated bittersweet
chocolate(about 1 1/2 ounces)     for the ganache 1/2 cup
low-fat buttermilk   1 1/2 cups chopped bittersweet
chocolate(about 5 ounces)     1.   Heat oven to 350° Sift flour
into a mixing bowl, then resift flour with 3/4 cup sugar.    
2.   In the bowl of an electric mixer fitted with the whisk
attachment, beat egg whites on medium speed until frothy. Add cream
of tartar; beat until whites have tripled in size, about 3 minutes.
Slowly add remaining 3/4 cup sugar; beat until firm and glossy, 1
to 2 minutes.     3.   Transfer egg whites to a large metal
mixing bowl. Gently fold in flour mixture in three additions,
mixing from bottom of bowl (try to use fewest strokes possible).
Fold in grated chocolate, and mix. Pour batter into a 10-inch
nonstick angel-food-cake pan, and run a knife through center of the
batter to release any air bubbles. Bake until top becomes golden
brown, 40 to 45 minutes.     4.   Invert the pan over the neck
of a bottle, and cool about 1 hour. Loosen the cake from the pan
with a flexible knife, and turn the cake over onto cake stand.  
  5.   Make ganache: Heat buttermilk over medium heat; add chopped
chocolate, and stir slowly until melted. Since buttermilk will
curdle slightly, strain mixture through a very fine sieve, and stir
slowly until smooth. Spread ganache over top of cooled angel-food
cake, and allow to harden slightly before serving.

1 beef bouillon cube
1 pinch salt
1 pinch marjoram
1 pinch cumin
1 pinch oregano
2 bay leaves
24 tortillas
3 cups grated Cheddar cheese
1 quart sour cream
Salsa
Fry onion and garlic in oil. Add tomato sauce, water, and bouillon
cube. Simmer. Fry tortillas, dip in sauce, put in layers in
casserole: tortillas, salsa, cheese and sour cream. Repeat layers.
Bake 30 minutes at 350 degrees F.

Chile Paste
3 dried pasilla peppers
2 tablespoons dry white wine
Water

Place peppers in small saucepan. Add wine and 1/4 cup water. Bring to
a boil and simmer until peppers have softened, 2 to 3 minutes. Pour
in blender. Add 2 tablespoons water and blend until fairly smooth, 10
seconds. Add 2 to 3 tablespoons water if needed to reach desired
consistency. Strain into small bowl. Set aside. Makes 1/4 cup.

Shrimp Stock
1/4 cup olive oil
1/2 onion, diced
1 small carrot, diced
2 stalks celery, diced
1/4 cup tomato paste
1/2 pound medium shrimp
2 tablespoons brandy
2 tablespoons dry white wine
8 cups chicken stock

Heat oil in large saucepan over medium heat. Add onion, carrot and
celery and sauté until softened, 5 to 6 minutes. Add tomato paste and
cook, stirring, 2 to 3 minutes. Add shrimp. Sauté until shrimp is
cooked, 1 to 2 minutes. Add brandy and wine and bring to boil. Cook
until alcohol has burned off, 1 to 2 minutes, then add stock and
return to boil. Reduce heat and simmer 45 minutes. Strain stock and
reserve; discard vegetables and shrimp.

Assembly
1 tablespoon olive oil
1 red onion, diced
1/4 pound banana squash, diced
2 tablespoons Chile Paste
1/2 cup Arborio rice
Shrimp Stock
1 cup ranchero cheese, crumbled
2 tablespoons whipping cream
12 large shrimp, peeled and deveined
2 eggs, lightly beaten
Salt

Heat oil over medium heat and add onion. Sauté until softened, 2
minutes. Add squash and Chile Paste. Sauté a few minutes to heat. Add
rice and Shrimp Stock. Cook and stir occasionally 30 minutes.

Add cheese, whipping cream and shrimp. Cook 10 seconds, then add
eggs. Add salt to taste and stir well.

Yields 6 servings.

Each serving: 291 calories; 1,258 mg sodium; 117 mg cholesterol; 14
grams fat; 18 grams carbohydrates; 19 grams protein; 0.49 gram fiber

Cafe Tu Tu Tango Black Bean Salsa - Great as an appetizer!

8 ounces dried black beans (or can use a can of already cooked black
beans, rinsed and drained)
1 1/4 cups fresh or frozen corn kernels
1 pound tomatillos, peeled and diced
1 bunch green onions, white and green parts, finely chopped
1 green bell pepper, diced fine
1 red bell pepper, diced fine
1/4 cup olive oil
1/4 cup red wine vinegar
Hot pepper sauce
Worcestershire sauce
Cumin
Salt and pepper

Place black beans in a large pot, cover with water and soak
overnight. Pick out any split beans. Strain, return to pot and cover
with fresh water. Bring to a boil, reduce heat and simmer until beans
just begin to burst, about 1 1/2 hours. Strain gently and cool.

Toss beans with corn, tomatillos, onions, peppers, olive oil and
vinegar. Season to taste with the hot pepper sauce, Worcestershire,
cumin and salt and pepper. Refrigerate at least 3 hours.

Serve chilled or at room temperature.

Makes about 7 cups.

Per 1/2 cup serving: 106 calories, 4 grams protein, 14 grams
carbohydrate, 4 grams fat (0.6 gram saturated), 34 percent calories
as fat, 2.5 grams fiber, 0 cholesterol, 4 milligrams sodium

1 (8 ounce) package green or spinach noodles
1 pound shelled and de-veined cooked shrimp or
    crab meat or diced cooked chicken
1 bunch scallions, chopped
1/4 cup diced green bell pepper
3/4 cup mayonnaise
3/4 cup sour cream
1/4 teaspoon Worcestershire sauce
1 cup grated sharp Cheddar cheese
Preheat oven to 350 degrees F.
Butter a 2-quart casserole and set aside.
Cook noodles in salted boiling water until just barely al dente.
Drain thoroughly and place in the bottom of the prepared casserole.
Place shrimp, onions and green pepper on top.
Combine mayonnaise, sour cream and Worcestershire sauce. Pour over
shrimp and noodles, and sprinkle top with grated cheese. Bake for
30 minutes.

Tahoe Brunch (Must Make Ahead)

12 slices white bread, crusts removed
2 to 3 T. margarine, softened
1/2 cup margarine
1/2 lb. fresh mushrooms, trimmed and sliced
2 cups thinly sliced yellow onions
Salt
Pepper
1 1/2 lb. mild Italian sausage
3/4 to 1 lb. Cheddar cheese, grated
5 eggs
2 1/2 cups milk
3 t. Dijon mustard
1 t. dry mustard
1 t. ground nutmeg
2 T. finely chopped fresh parsley

Butter bread with softened butter or margarine and set aside. In large
skillet, melt the 1/2 cup butter and brown the mushrooms and onions over
medium heat for 5 to 8 minutes or until tender. Season to taste with salt
and pepper. Set aside; cook sausage and cu into bite size pieces. In greased
11 x 7" shallow casserole, layer 1/2 of the bread, mushroom mixture, sausage
and cheese. Repeat the layers, ending with the cheese. In medium bowl, mix
the eggs, milk, both mustards, nutmeg, 1 t. salt and 1/8 t. pepper. Pour
over sausage and cheese casserole. Cover casserole and refrigerate
overnight. When ready to bake, sprinkle parsley evenly over top of
casserole. Bake uncovered in preheated 350 oven for 1 hour or until bubbly.
Serve at once, with a fruit salad and crust bread. Note: For milder version,
substitute 1 1/3 cup chopped scallions for the yellow onions and 3/4 to 1
lb. sliced American cheese for the Cheddar cheese. This must be prepared 24
hours in advance. Serves 8

1 loaf Italian bread, cut into 1 1/2-inch cubes
1 (10 ounce) box frozen chopped spinach,
    thawed and squeezed to remove excess liquid
1 (4 ounce) stick pepperoni, quartered
    lengthwise and thinly sliced crosswise
1 large tomato, cored and diced
1 cup shredded mozzarella cheese
1/2 teaspoon Italian seasoning
4 eggs
1 cup half-and-half
1/2 teaspoon salt
1/2 teaspoon pepper
Coat shallow 12 x 7-inch baking dish with nonstick cooking spray.
Toss together bread, spinach, pepperoni, tomato, cheese and Italian
seasoning in large bowl. Spread evenly in prepared dish.
Whisk together eggs, half-and-half, salt and pepper in a bowl. Pour
evenly over bread mixture. Cover with plastic wrap. Refrigerate at
least 2 hours or overnight.
Preheat oven to 425 degrees F.
Remove dish from refrigerator. Let stand 5 minutes.
Remove plastic wrap; cover with foil. Bake for 15 minutes. Uncover;
bake 15 minutes. Let cool slightly and serve.

1 pound peeled shrimp
3/4 cup (1 1/2 sticks) butter
2 tablespoon Worcestershire sauce
1/2 cup chicken stock (broth)
1/2 cup beer (your choice)
2 tablespoons seasoning
5 mushrooms, sliced and lightly dusted with flour
3 green onions, minced
1 package angel hair pasta

In a large skillet, add butter, Worcestershire, chicken stock, beer
and seasoning. Bring to a light boil 1 minute.

Add shrimp cook and stir 2 minutes.

Add mushrooms and green onions. Cook 2-3 minutes.

Divide angel hair, sprinkle with grated parmesan, and spoon
shrimp/mushroom sauce over pasta.

Serve with crusty French bread and mix greens

Seasoning
1/2 tablespoon crushed red pepper
1 dried thyme leaf (1 tablespoon)
3/4 tablespoon dried rosemary leaves
1/2 tablespoon dried oregano leaves
2 1/2 tablespoons granulated garlic

8 ounces canned, diced green chiles
1 pound Monterey jack cheese, coarsely grated
1 pound Cheddar cheese, coarsely grated
3/4 cup evaporated milk
4 eggs, separated
1 tablespoon flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 tomatoes, thinly sliced
Preheat oven to 325 degrees F.
Mix chiles and cheeses and put into a buttered shallow casserole.
In a small bowl combine milk, egg yolks, flour, salt and pepper. 
In a large bowl beat egg whites to stiff peaks. Gently fold whites
into the yolk mixture. Then pour the mixture over the cheese and
chile mixture and carefully blend. Bake for 30 minutes.
Remove from oven and lay tomato slices over the entire top. Return
to oven and bake 30 minutes longer, or until an inserted knife
comes out clean. Garnish with a sprinkling of green chiles.
Serves 6 to 8.

Have ready an 8 x 11-inch baking pan.
Remove fluff from potatoes and season. Beginning with chicken as
bottom layer, alternate the remaining ingredients, ending with
cheese as top layer. Drizzle butter over all. Cover and bake at 365
degrees F for 20 minutes.
Serve with garden salad and garlic biscuits.
Serves 5 to 7.

3 tablespoons vegetable oil
1 medium onion, chopped
8 tamales, any variety, cut into bite-size chunks
4 eggs
Red or green chile sauce, warmed
Tomatoes and scallions, chopped
Crema or sour cream
Cheddar cheese, grated
In a heavy skillet, warm butter and oil over medium heat. If the
tamales are fairly dry, use about a tablespoon more of oil. Add
onion and sauté until very soft. Add tamale pieces and stir them in
gently. Cover the skillet for 2 to 3 minutes to let the mixture
steam and heat through, developing a little crust on a few pieces.
Keep the mixture warm while preparing the eggs either sunny-side up
or scrambled.
Spoon the tamale mixture onto plates. Arrange an egg over each and
add a generous amount of sauce. Top with the tomato, scallions,
crema and cheese. Serve immediately.
Serves 4.

Zesty Onion Meatloaf

1 1/2 pounds ground beef
1 can condensed Italian tomato soup
1 (2.8 ounce) can French fried onion, divided
2 tablespoons Worcestershire sauce
3/4 teaspoon salt
1/4 teaspoon pepper
1 egg

Thoroughly mix beef, 1/3 cup of the soup, 2/3 cup of the French
fried onion, Worcestershire, salt, pepper and egg. Shape into 8 x
4-inch loaf on shallow baking dish. Bake at 350 degrees F for 1
hour or until done (160 degrees F).

Pour off fat. Spoon remaining soup over meatloaf and top with
remaining 2/3 cup French fried onions. Bake 5 minutes or until
onions are golden.

Make 6 servings.

1 pound extra wide noodles, cooked
16 ounces Cheese Whiz
8 ounces Colby cheese, grated
1 cup minus 2 tablespoons butter or margarine
1 or 2 large onions, sliced
Enough prepared instant mashed potatoes
    for 12 servings (or use leftover potatoes)
Topping
1/2 cup Parmesan cheese
Parsley flakes
Sauté onion and butter. Add Cheese Whiz. Stir until melted and
combined. Put a small amount of this mixture into bottom of a 13 x
9-inch baking pan. Put half of the noodles on top; then half the
potatoes, in small mounds. Top with half of the grated Colby, then
half of the melted cheese/onion mixture. Repeat layers. Top with
Parmesan cheese and sprinkle with parsley flakes. Bake 350 degrees
F for 50 minutes or until bubbly.

Quiche-Stuffed Peppers
2 large red bell peppers (about 3/4 pound)
2 large green bell peppers (about 3/4 pound)
2 tablespoons butter or margarine
1 medium onion, chopped
1/4 pound boiled ham, chopped (1/2 cup)
2 tablespoons all-purpose flour
1/4 teaspoon dried oregano leaves
Dash of pepper
1 cup half-and-half
2 large eggs
1/2 cup crumbled feta cheese (3 ounce)
Carefully remove stem, with about an inch of surrounding pepper,
from each pepper. Chop pepper from around stems to equal 2
tablespoons; set aside.
Keeping peppers whole, remove and discard ribs and seeds. Stand
each pepper upright in a microwave-safe muffin pan cup; set aside.
In medium glass bowl, microwave butter on HIGH for 30 seconds. Add
reserved chopped pepper, onion and ham; microwave on HIGH for 3
minutes or until onion is tender, stirring after 1 1/2 minutes.
Stir in flour, oregano and pepper until smooth. Gradually stir in
half-and-half; beat in eggs and stir in 1/3 cup feta cheese. Spoon
into the pepper cups, dividing evenly; microwave on HIGH for 4
minutes. Sprinkle with remaining feta cheese. Microwave on MEDIUM
10 to 12 minutes, or until just set, rotating muffin pan a quarter
turn every 3 minutes.
Makes about 4 servings.

Bourbon Pecan Smashed Sweet Potatoes

Difficulty: Easy
Prep Time: 5 minutes
Cook Time: 20 minutes
Yield: 4 servings 3 medium sweet potatoes, peeled and cut into
chunks
3 tablespoons butter, cut into small pieces
1/2 cup chopped pecans, a couple of handfuls
3 tablespoons brown sugar
2 ounces bourbon
1/2 cup orange juice
1/4 to 1/2 teaspoon freshly grated nutmeg
Salt and pepper Bring a medium pot of water to a boil. Add sweet
potatoes and cook 12 to 15 minutes until very tender. Drain sweet
potatoes in a colander. Return pan to medium heat. Add butter to
the pan. When butter melts, add nuts and toast for 2 minutes. Add
sugar and let it bubble. Add bourbon and cook out alcohol, 1
minute. Add orange juice and the cooked sweet potatoes. Smash with
a masher and season the sweet potatoes with nutmeg, salt and
pepper.

Texas Sheet Cake
2 c. sugar
1 stick margarine
4 tbsp. cocoa
1/2 c. buttermilk
1 tsp. soda, vanilla, cinnamon
2 c. flour
1/2 c. crisco
1 c. water
2 eggs, slightly beaten

ICING:
1 stick margarine
6 tbsp. milk
1 tsp. vanilla
4 tbsp. cocoa
1 box powdered sugar
1 c. chopped pecans

Sift flour and sugar together in large mixing bowl. Combine
margarine, crisco, cocoa, and water in saucepan. Bring mixture to a
rapid boil and pour over flour and sugar mixture, stirring well.
Add buttermilk, eggs, vanilla, soda , and cinnamon. Mix well and
pour into greased 16x11 inch pan. Bake 20 minutes at 400.
Start making icing about 5 minutes before cake is done. Mix
together and bring to a boil, the margarine, cocoa, and milk.
Remove from heat and add powdered sugar, vanilla, and chopped
pecans. Beat well. Spread on cake while cake is still hot. Leave
cake in pan to ice.

1 cup chopped carrots 2 cans (14-1/2 oz. each) chicken broth 1
cup water 1/2 tsp. ground pepper 1/8 tsp. ground nutmeg 1/2
cup BREAKSTONE'S or KNUDSEN Sour Cream
PLACE squash and carrots in large pot. Add chicken broth and
water; stir. Bring to boil over medium-high heat; cover. Reduce
heat to medium-low; simmer 10 minutes or until vegetables are
tender. Cool slightly. ADD chicken broth mixture to food
processor or blender container in small batches; cover. Process
until pureed. Return to pot; keep warm on low heat. Repeat with
remaining chicken broth mixture. STIR in pepper and nutmeg.
Remove from heat. Add a few tablespoonfuls of hot soup to sour
cream in small bowl; mix well. Return to soup in pot; stir until
well blended.

Capital Automotive LLC Announces Tender Offers for its 7 1/2% Series A Cumulative Redeemable Preferred Units and 8% Series B Cumulative Redeemable Preferred Units


MCLEAN, Va., Jan. 13 Capital Automotive LLC (the
"Company"), the nation's leading specialty finance company for automotive
retail real estate, today announced that the Company has commenced cash tender
offers for any and all of its outstanding 7 1/2% Series A Cumulative
Redeemable Preferred Units (CUSIP No. 139733 11 7) and 8% Series B Cumulative
Redeemable Preferred Units (CUSIP No. 139733 30 7) (the "LLC interests").
The Company is the successor to Capital Automotive REIT (the "REIT"), a
Maryland real estate investment trust, which was merged with and into Capital
Automotive LLC effective as of December 31, 2005 (the "Restructuring"). In the
Restructuring, all of the holders of the REIT's outstanding Series A and
Series B preferred shares received the Company's Series A and Series B LLC
interests, respectively, with their rights, preferences, restrictions,
qualifications, limitations, terms and conditions as provided in the
instrument pursuant to which they were issued, the REIT's Articles
Supplementary, with respect to the preferred shares materially unchanged.
In connection with the Restructuring, the REIT deregistered its Series A
and Series B preferred shares under the Securities Exchange Act of 1934 (the
"Exchange Act") and removed its Series A and Series B preferred shares from
quotation on the Nasdaq National Market. The LLC interests are not registered
under the Exchange Act, nor quoted on the Nasdaq National Market or any other
automated quotation system or traded on or through any stock exchange.
Holders of LLC interests who validly tender their LLC interests at or
before 5:00 p.m., New York City time, on Monday, February 13, 2006, unless
extended (the "Expiration Time"), and do not validly withdraw their LLC
interests at or before the applicable Expiration Time, will receive as payment
for the LLC interests $25.00 per LLC interest. The Company expects to make the
regular quarterly distribution payment on the LLC interests for the period
ended January 31, 2006, when, as and if declared by its Board of Managers, to
holders of LLC interests. When, as and if declared, the Board of Managers
expects that this distribution will be payable to holders of record of the LLC
interests as of February 1, 2006 on February 15, 2006. In addition, the
Company expects to pay a partial distribution on the applicable payment date
for each tender offer for distributions accrued between January 31, 2006 and
the applicable Expiration Time to holders whose LLC interests are tendered in
response to such tender offer and not withdrawn. The Company expects payment
to be made on a business day promptly after the applicable Expiration Time.
The Company expects that LLC interests that are not tendered will continue to
receive regular distributions on a quarterly basis when, as and if declared by
its Board of Managers. The Company will cease to make distribution payments on
LLC interests purchased in a tender offer after the applicable payment date
for such tender offer, except for the regular quarterly distribution payment
payable to holders of record of the LLC interests as of February 1, 2006 on
February 15, 2006.
Each tender offer is scheduled to expire at 5:00 p.m., New York City time,
on Monday, February 13, 2006, unless extended or earlier terminated. Tendered
LLC interests may not be withdrawn after the applicable Expiration Time,
except as described in the Offer to Purchase, dated January 13, 2006, or as
required by law.
